Ruby Violet Tufnell Park parlour is celebrating it’s second year anniversary with the launch of a series of creative masterclasses.
Since opening on the borders of Kentish Town and Tufnell Park in 2012, the venue quickly gained a cult following for its wide selection of inventive flavours and extravagant special occasions products.
Meanwhile the vintage ice cream van, Billy, travels around the capital and the country winning new followers with scoops of Salted Caramel with Almond Nut Brittle, Heath Honey, and Seville Orange Marmalade ice cream, and Elderflower and Prosecco sorbet.
The new masterclasses offer the chance to meet Ruby Violet founder Julie Fisher and spend a few hours discovering the magic and mystery of working with delicious ice cream and fantastic sorbet, and creating impressive desserts from more than 100 flavour recipes.
The publication of Julie’s book Ruby Violet’s Ice Cream Dreams (Hardie Grant, £16.99) in summer 2013 revealed how to take ice cream to the next level, transforming it into impressive layered cakes, bombes and Antarctic rolls.
Ruby Violet’s Baked Alaska Masterclass (11 August, 7pm-9:30pm, £75) is a two and a half hour session including an introduction to ice cream making, instruction in making Mini Baked Alaskas, which all attendees will make and take home with them, plus a tipple or two.
Ruby Violet’s Summer Flavours Masterclass (18 August, 7pm-9:30pm, £75) is a refreshing tour of the brightest and ripest summer fruits – the only sort which make it into our sorbet and ice cream.
From strawberries and blackcurrants to peaches and apricots, Ruby Violet founder Julie Fisher will introduce her favourite summer flavours and discuss preparation and flavour matching with a bountiful tasting. Includes frozen treats to take home plus a tipple or two.
A series of children’s workshops are also taking place on Wednesday mornings throughout August.
Ruby Violet’s Children’s DIY Sundae Socials (6,13, 20 August, 10am-11am, £10) will give our favourite customers – accompanied by an adult – the opportunity to experiment with flavours and textures as they create their own ice cream sundaes. The little ones are always sneaking into the kitchen to see how we make the ice cream, now they can get their own hands-on experience.

Ruby Violet is also known for its fine selection of extravagant sundaes, soda floats, unusual flavours and alcoholic sorbets. Flavours include: Gin & Tonic, Blood Orange & Campari, Chilli Chocolate, Apricot & Sour Cream, and Pistachio, Rosewater & Cardamom.
About Ruby Violet
Based on the borders of Tufnell Park and Kentish Town, a little jewel in the heart of Fortess Road, from where we serve our delicious ice cream and sorbet.
All its dairy ice cream is made in small batches, using seasonal fruit prepared daily on the premises. In the summer the mint, rhubarb, apples and honey are all sourced from within a few miles. Blackberries and damsons come from Julie’s home village of Flintham in Nottinghamshire.
Julie decided right at the beginning to only use organic milk, free range eggs, British or fairtrade sugar.
No artificial preservatives or flavourings and all our tubs are biodegradable and compostable. It also recycles spoons.
The ice creams all contain egg yolk. The sorbets are dairy-free.
